Good Fats from The New York Times, By using nuts in sauces and reducing the amount of animal fats you can change your diet dramatically. Not new, but real. This is from a collaboration between the CIA and Harvard School of Public Health. Good schools (I am an alum of CIA) and this is a good conference.

Reducing Trans-Fats from The Steamboat Pilot and Today
